Swiss Meringue Buttercream: Bringing a Little Taste of Summer to a Rainy English Day

Why I love this silky buttercream, why it costs more, and why I think it's absolutely perfect for cupcakes.
A Little Sunshine on a Rainy Day
Today is one of those typical English rainy days. Grey skies, rain falling outside and not a glimpse of sunshine in sight.
So, naturally, I decided to bring a little bit of summer into the house through baking!
I wanted to create something that reminded me of warmer days, sunshine, strawberries and cream, and those lovely afternoons spent enjoying tea and cake.
And that's exactly where the inspiration for today's cupcakes came from.
I baked a batch of soft vanilla cupcakes, filled them with sweet strawberry jam and finished each one with a generous swirl of silky Swiss meringue buttercream.
The combination instantly reminded me of strawberries and cream on a warm summer's afternoon. That lovely, delicate sweetness of strawberries paired with something wonderfully light and creamy.
They also had a little afternoon tea feel about them. The kind of cupcakes you could imagine sitting on a beautiful cake stand, served alongside a pot of tea, finger sandwiches and perhaps a few fresh strawberries.
And although the rain was still falling outside, my kitchen suddenly felt a little more like summer.
Sometimes you can't change the weather, but you can certainly change the mood with a little baking!
So, What Makes Swiss Meringue Buttercream So Special?
If you've ever eaten a cupcake topped with traditional American buttercream, you'll probably be familiar with its sweetness.
Traditional buttercream is lovely, and I use it regularly in my baking, but Swiss meringue buttercream is something quite different.
It's incredibly smooth, silky and light on the palate, with a much less sugary taste.
Rather than the familiar sweetness you get from traditional buttercream, Swiss meringue buttercream has a delicate, creamy flavour that allows the cake itself to shine.
And the texture? Absolutely beautiful.
It's wonderfully soft, with a luxurious finish that almost melts in your mouth.
For anyone who finds traditional buttercream a little too sweet, Swiss meringue buttercream can be a lovely alternative.
It's one of those things that, once you've tried it, you can really appreciate the difference.

Why Do I Charge More for Swiss Meringue Buttercream Cakes?
This is something I think is really important to explain, because when you order a handmade cake, you're not simply paying for the ingredients.
You're paying for the time, skill, knowledge and care that go into making it.
Swiss meringue buttercream takes considerably more time and attention to prepare than traditional buttercream.
It's a much more technical process, involving careful temperature control, patience and an understanding of how the buttercream should look and feel at different stages.
It's not something you can simply throw together in a mixing bowl in a few minutes.
Getting that beautiful, silky consistency takes time and practice. Even experienced bakers can occasionally encounter problems with the texture or temperature.
It also involves additional preparation, equipment and a different balance of ingredients.
And as any baker will tell you, time is one of the biggest costs involved in creating handmade cakes.
That's why I charge a premium when customers request Swiss meringue buttercream.
It's not about making a cake unnecessarily expensive. It's about reflecting the additional work involved in creating something that requires more time and technique.
When you choose Swiss meringue buttercream, you're choosing a different level of texture and finish, and that extra preparation deserves to be reflected in the price.
Why I Actually Prefer Swiss Meringue Buttercream on Cupcakes
Now, here's something that might surprise you.
Although Swiss meringue buttercream looks absolutely beautiful on tall celebration cakes, I actually think it works particularly well on cupcakes.
And there are a few reasons for that.
Swiss meringue buttercream has a softer, silkier consistency than traditional American buttercream.
That makes it wonderful for piping beautiful swirls and delicate finishes, but it also means it's more sensitive to warmer temperatures.
When you're working with a tall cake, especially one with several layers, stability becomes incredibly important.
The buttercream needs to hold its shape, work alongside the cake's structure and withstand the time spent decorating, transporting and displaying the finished cake.
Swiss meringue buttercream can absolutely be used successfully on tall cakes, and many professional bakers use it for exactly that. However, it requires careful handling, appropriate chilling and consideration of the temperature.
Personally, I find traditional buttercream more practical for many of my tall celebration cakes, particularly when they involve intricate decorations or need to be transported.
Cupcakes, on the other hand, are where I think Swiss meringue buttercream really shines.
There's no tall structure to worry about, and those beautiful, silky swirls become the star of the show.
You get all the wonderful texture and delicate flavour without quite so many of the challenges that come with covering a large cake.
And when you bite into a cupcake topped with Swiss meringue buttercream, you really get to appreciate how beautifully it complements the sponge.

Today's Cupcakes: Strawberries, Cream and Afternoon Tea
Today's baking session reminded me why I love experimenting with different buttercreams.
With the rain outside and the kitchen feeling particularly cosy, I wanted to make something that felt fresh, summery and a little indulgent.
I decided on vanilla cupcakes filled with strawberry jam, topped with generous swirls of Swiss meringue buttercream.
And they turned out exactly as I'd hoped.
The sweetness of the strawberry jam, the delicate vanilla sponge and the creamy buttercream worked beautifully together.
The flavour instantly reminded me of strawberries and cream, one of those combinations that always makes me think of British summertime.
But there was something else about them too.
They reminded me of afternoon tea.
Not necessarily a particularly fancy afternoon tea, but that lovely feeling of sitting down with a pot of tea, a selection of little cakes and absolutely nowhere you need to be.
I could imagine these cupcakes being served at a summer garden party, baby shower, birthday afternoon tea or even a little gathering with friends.
And that's one of the things I love most about baking.
Sometimes the simplest combinations create the loveliest results.
You don't always need complicated flavours or elaborate decorations to make something feel special.
Sometimes vanilla, strawberry and a beautiful buttercream are more than enough.
